Spinach Mac and Cheese

1 pound of rice pasta shells
1 onion
2 cloves of garlic
2 cups of fresh spinach
1/2 teaspoon of cayenne pepper
1 teaspoon of red pepper flakes ( optional )
1/2 teaspoon of black pepper
1/2 teaspoon of salt
1 pound of shredded cheddar cheese
1 pound of shredded mozzarella cheese
1 teaspoon of olive oil
1 cup of gluten free cornflakes

Boil water in a pan. Dump the pasta in boiling water, there should be twice as much
water than pasta. Pour the olive oil in the water and boil about 15 min. or until pasta
softens. Dice onion and garlic, and cook in a large frying pan.
Strain the water from the pasta. Mix all ingredients ( except cornflakes) in a large mixing bowl.
Rice pasta is very sticky, don't get discouraged just do the best you can to mix everything.
Pour into a large casserole dish. Crush cornflakes and sprinkle them evenly on top.
Pre-heat the oven to 350, and bake for about 15 to 20 min.
