A lot of people put chicken or pork in their enchiladas, but spinach and cheese
is way better. Trust me.
Spinach and Cheese Enchiladas
6 oz. of fresh spinach
1 onion
2 cloves of garlic
8 whole grain flour tortillas
1 28oz. can of enchilada sauce
12 ounces of shredded cheddar cheese
1 fresh jalapeno ( optional )
Dice and cook the onions in a frying pan. Add the diced garlic to the onions after a couple minutes. Putting the garlic in a little later helps the garlic maintain it's flavor.
Use a large mixing bowl and put in the spinach, 1/2 can of enchilada sauce, 1/2 the cheese, uncooked diced jalapenos, and your cooked vegetables. The jalapeno will be spicier if uncooked, but will get cooked some while in the oven. Hand mix your ingredients. Place about a handful of your ingredients on the middle of a tortilla, fold from the back, then on either side. Place face down on to a greased (I usually use a spray olive oil or bush to grease the pans) brownie pan or casserole dish. Make sure to lay the tortilla on top of the folds so it can better keep it's shape. After you have all of the tortillas in your pan evenly pour the rest of the enchilada sauce over them. Do the same with the rest of the cheese. Pre-heat the oven to 350. And bake for 10 min. to 15 min., or until cheese melts and begins to brown.
can be gluten free if you use gluten free tortillas, ( rice tortillas are usually gluten free )
and make sure your sauce is gluten free.

Zucchini Cookies
2 large zucchinis
2 eggs
1 cup of flour
1 cup of seasoned bread crumbs
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of cayenne pepper
Slice zucchini into 1/4 inch slices. Beat the eggs and pour into a shallow bowl. Mix all dry ingredients on a plate. Dip the zucchini in the egg on both sides. Then dip the egg soaked
zucchini into the dry ingredients. Pour a little bit of olive oil in a large frying pan.
Fry on both sides until golden brown.
Can be gluten free if you use rice flour, and substitute
breadcrumbs for crushed cornflakes and add Italian seasonings. Just make sure that the
cornflakes are gluten free.
