Meat substitutes are a good way to bridge the gap to vegetarian diet.
From burgers to vegetarian "chicken" there are a number of great products out there.
If you are expecting them to taste exactly like meat products you're setting
yourself up for disappointment. However, I have found that due to the creativity of many
companies most meat substitutes are actually more flavorful than the meat products
they imitate. 







Vegetarian Meatloaf                                                                                                           

1 package of 4 vegetarian burgers
2 eggs
1 yellow onion
2 cloves of garlic
1 bell pepper
6 0z. of shredded cheddar cheese
1 cup of fresh spinach
1 cup of black beans ( use canned or soak fresh beans overnight )
2 tablespoons of apple sauce
1 fresh jalapeno ( optional )

Heat up a frying pan and cook the burgers until they soften up. Then put them in a large
mixing bowl. Dice the onion, garlic, pepper, and saute them in your frying pan.
Add spinach to the saute.
Dice the uncooked jalapeno and mix all ingredients in a large mixing bowl.
You can either use a potato masher or just use your hands.
Pre-heat the oven to 350. Brush cookie sheet with vegetable oil.
Place on cookie sheet and form ingredients into a loaf shape.
Bake for about 25 to 30 min. or until it browns on top.
Can be gluten free
if you use gluten free vegetarian burgers.
I serve with ketchup or barbecue sauce. You can also make a great meatloaf
sandwich.


Baked Hush Puppy Surprise

1 cup of cornmeal
1 cup of flour
1 1/2 teaspoon of baking powder
1 cup of apple sauce
2 eggs
1/3 cup of milk
1/2 teaspoon of cayenne pepper
1 tablespoon of sugar
1 teaspoon of salt
1 yellow onion
2 cloves of garlic
1 1/2 cups of vegetarian sausage 
2 cups of cheddar cheese

Place the first nine ingredients into a large mixing bowl. You can use an egg beater or a hand
mixer to blend them together. Chop up and cook sausage in a frying pan. Next dice up the
onions and garlic then add them to the sausages. Pre-heat the oven to 450. Mix all ingredients
together in the mixing bowl. Brush muffin tin with vegetable oil and fill each tin half way.
Bake for 10 min. or until golden brown.
