Spicy  



I love spicy food so much I cry tears of joy.
Just about anything can be spiced up by adding hot peppers, hot sauces,
or a number of great seasoning.
Don't over do it start out small, then add more to find your perfect blend.
You can always add more, but you can't usually take it out once it's in.

Nachos

1 bag of large nacho chips
1 can of re-fried beans ( make sure they're vegetarian, some re-fried beans contain lard )
2 fresh jalapenos ( or sub habanero peppers for extra fire ) 
1 red onion
2 cups of fresh spinach
1 cup of vegetarian chili
1 can of sliced black olives
1 can of black beans ( or about a cup and a half soaked overnight )
2 pound bag of shredded cheddar and mozzarella cheese
2 large tomatoes

Dice the onion and tomatoes. Thinly slice the jalapenos. Dump half the bag of chips on a
cookie sheet. Layer half  the cheese and spinach on top of the chips evenly.
Add the rest of the chips. Take a spoon and evenly distribute
re-fried beans, chili, and black beans. Cover with the rest of the spinach and cheese.
Put jalapenos on top.
Pre-heat the oven to 350 and bake for about 10 min. or until cheese melts
Once out of the oven put the uncooked tomatoes, onion, and olives on top.
Uncooked jalapenos will result in a spicier pepper. Can be gluten free just by using
gluten free chips.



Buffalo and Blue cheese Hummus

1 can of garbanzo beans or about 2 cups ( or soak fresh beans overnight )
8 oz. of blue cheese
1/2 cup of tahini
2 cloves of garlic
1 teaspoon of lemon juice
1 teaspoon of olive oil
1 tablespoon of buffalo sauce
1/2 teaspoon of salt
1/2 teaspoon of black pepper

Chop up the garlic or use cheese grater to avoid garlic clumping.
Place all ingredients into a food processor and mix until creamy.
Can be served right away, but it is better to be refrigerated for at least a few hours so flavors
can mold together. This item can be gluten free. Just make sure the buffalo sauce you use
is free of gluten.
